March Photo Challenge – Breakfast.

We had ham, strawberries, cottage cheese pancakes, and coconut syrup for breakfast this morning.  It was the finale to a great scrapbooking weekend with friends.

Cottage Cheese Pancakes
1 cup cottage cheese
6 eggs
1/2 cup flour
1/4 tsp salt
1/4 cup oil
1/4 cup milk
1/2 tsp vanilla
1 tsp sugar

Blend all things well in blender and fry on hot, greased griddle.

Coconut Syrup
1 cup sugar
1 cube butter
1/2 cup coconut milk with 1 tsp lemon juice added (sometimes I just use regular milk and lemon juice)
1 tsp soda
1 tsp coconut flavoring

Bring sugar, butter, and coconut milk/lemon juice to boil in saucepan.  Boil one minute then remove from heat and cool one minute.  Add soda and flavoring.  Stir well.  Serve hot.

That's funny...when i read cottage cheese pancakes i got excited and wanted to ask for the recipe. You always deliver Jane! You are so good to host...for some reason food always tastes SO good in your house...probably because there is more then just good ingredients put into your food...there's a great big smile that goes along with it. Love reading your blog and thank you for always being so good to comment on mine.

Well that sounds amazing! I've never heard of coconut syrup, but it sounds right up my alley.

I LOVE cottage cheese pancakes. and one time I had a little cottage cheese and a little ricotta cheese leftover from something so I threw both of them into some pancake mix and they were SO YUMMY!!!
