Homemaking Tip-Casserole Cover and Green Bean Giveaway


Unlike the rest of my family, I like casseroles. I just don’t understand what is not to like about only one pan to wash. Today’s tip works great for covering a casserole while it bakes. Instead of using tinfoil to cover it, just turn a cookie sheet upside down on top of the pan; or instead of using plastic wrap to keep a frosted cake from drying out, just put a cookie sheet on top of it. It’s not fancy or bright and shiny, but it’s cheap and it works.

Two questions:

Do you have a casserole recipe that would change my family’s opinion? I would love it if you’d share it in the comments.

Does anybody want a laundry basket full of fresh green beans? The girls and I picked them yesterday, and even at the risk of becoming the zucchini neighbor I thought I'd see if anybody wants them. Just call or comment.

Oh those green beans look delightful. I am all for growing some myself and having them to eat. However, I don't think that the landlord would like me turning the parking lot into a garden.

I wish I could swing by and pick up a bowl full of those green beans, they look so good! Maybe you need to open a roadside stand or something.

Thanks for the tips, why haven't I ever thought of using a cookie sheet for a lid?

I suppose if I didn't live 2.5ish hours away, I would definitely take you up on some of those green beans. I love fresh produce!!! We are now in watermelon country, as I understand, so we should be eating up some yummy melon soon!

We just finished the last ones you gave us. My mom has loved, loved them. She doesn't get garden fresh in Las Vegas. Thanks for feeding her, ha!

The greenbeans look yummy and fresh! I have used a cookie sheet a few times when I was surprised to find I had run out of aluminum foil.

Casseroles are yummy. I have a million different chicken casseroles, etc. but I will share with you my favorite casserole. It is "chili casserole" and after I grew up I found out that it is a version of what New Mexico people call "Frito pie". In an electric skillet layer one can of Bush's mild chili beans, half a bag of Fritos, and lots of cheese (this feeds my family of 6 with four young ones--add another layer if you have a larger group, etc.). Cook at the skillet's highest temp (usually 400 degrees) for about 5 minutes or until the cheese is melted. Serve with veggies. I like mine plain but some people add lettuce and tomatoes to theirs. It is sooo easy (and a wee bit spicy and very cheesy)! Enjoy!

I would love to have some of your vegetables since I wasn't able to have a garden this year for various reasons. The picture makes my mouth water.

Once again you have given a home making tip that makes me slap my forehead and ask, "Why didn't I think of that!?" You are, as ever, inspirational.

If I could pop by for beans I would! I love green beans, but ours didn't grow very well in our garden. We have, however, been enjoying fresh peas for a week or two.
