I just figured out a couple of days ago that it's much easier to take the carrot peeler out to the garden and peel the carrots right then and there--flipping the carrot peels all over the ground--than it is to bring them into the kitchen and flip the peels all over the sink.
Then again, I suppose it's easiest to just buy baby carrots and skip the whole mess altogether . . .

I made a roast last night and used unpeeled, scrubbed carrots, unpeeled baby potatoes, and peeled:) onions and they were scrumtious. Just tell yourself that you're being more virtuous by keeping on all those vitamin-rich peels for your family. That's why I NEVER peel a potato anymore, even for mashed spuds. I'm virtuous.
