Oh ho. This pretty much sums up my day. I canned a couple of batches of diced tomatoes, peppers, and onions, and a couple batches of jalapeño pepper jelly this afternoon. They're both good. Should the zombies come, you’re welcome to bring a spoon.

Next time you do any canning, please bottle your energy and share it with the world. We could use a lot more Jane's in this world. Also, please think about writing a book this winter on how to do it all and still look like a million! You are beautiful....inside and out!
Yesterday I canned peaches and mashed some for jam I'll attack later. Today I sliced and froze trays for smoothies and shakes. I almost have the boxes empty. But with meager dinners and a tired, sour attitude, I'm not sure it's worth it until I'm eating peaches in January. I'd love to get to pears, salsa, applesauce and... but this year I just may need to pull back. Every year, I remind myself of the parable.

put your pepper jelly on cream cheese and eat with crackers...so so yummy!
This pretty sums up my week too. My sister and I canned 53 pint bottles of spaghetti sauce last week, and we bought 5 boxes of peaches/pears yesterday we plan on working on soon! I don't mind canning at all, but I despise the cleanup!
I found some UT peaches for 77 cents a pound! I will be a canning crazy woman soon!!
