Tuesday – Save-the-Day Cookies


These are save-the-day cookies.  In college my roommate and I made them for lunch all the time.  We’d rush home from our campus classes, make a pot of them and eat them out of the pan as we drove the mile to the livestock center for our animal science labs.  We reasoned they were nearly as nutritious as a bowl of oatmeal since they were made with 1½ cups of oats and ¼ cup of milk.

Yesterday (being the last day of February) it was the eleventh hour and I still hadn’t made an official visit to one of the women I visit teach.  A pan of save-the-day cookies was my best solution.  They’re not a pretty cookie, but they serve in a pinch.  Such was my justification, it wasn’t the most attractive way to make a visit, but it would serve in a pinch.

Though I'm certain you have a recipe, I'll still share this one in case you need to save the day today.

No Bake Cookies

2 cups sugar
¼ cup cocoa
½ cup milk
½ cup peanut butter
1 cup coconut
¼ tsp salt
1 tsp vanilla
1½ cup oatmeal

Bring sugar, cocoa, and milk to a rolling boil.  Boil one minute.  Add peanut butter, stirring until well mixed.  Add coconut, salt, vanilla, and oatmeal.  Stir well.  Drop onto waxed paper.  Makes 20.  (If the mixture gets too dry as you’re dropping them onto the waxed paper add a few teaspoons water.)

Jim's family calls these soggies (when they didn't set up properly one time), and they are his absolute favorite. It's a happy day for him when he comes home to these.

I also have the easiest chocolate chip cookie bar recipe that is a simple solution in a hurry. My mom made them all the time when we were young...and now I know why!

THAT is really funny. Whit had a meeting and the kids were SO sad he was leaving I decided to get out of the house too. I thought, what can I make in like 4 minutes? I had some lollipops on hand (the big huge round rainbow ones) so my sisters (one of whom I had already seen and three I hadn't) got big round (kiddie) rainbow lollipops. My kids weren't delighted to give them away, so maybe I should have made these!

YUM...my 12 year old made those for FHE last night...our recipe really is healthy because it contains THREE cups oatmeal. AND IT IS YUMMOOOOOO. And NO they are not dry at all. If you boil too long it makes them dry.

One week for lunch, I made "no bake" type of cookies everyday for lunch. The kids LOVED it!! Some times, the simple is the best!

I have never had them with coconut. Glad you posted the recipe- we will have to try it.
Savanna made some here at our house last Monday night. She was asking about the "cocoa" and I pointed to the cabinet. My pointing skills were a little off, because she thought I pointed to the "hot cocoa."
They still turned out alright- maybe a little sweeter.

I've been thinking about these all day! We have a date tomorrow.

My yogurt + whipped topping fruit dip is my save-the-day solution. I always seem to have everything on hand. And lately we've been buying candy in ways we never have before. It doesn't get any easier (though pretty pricey and hard to justify as healthy).

Yummy! Save the day cookies - I like that. I did a very similar thing, being the lazy person I have been for the month, I dropped by a cute-sy craft for a couple of my sisters at the 11th hour as well. I am not fond of that method, but . . . it is what it is and since I go VT to the RS pres, I figured I should make an attempt!

Hmm, I haven't made these with coconut before – sounds like a good addition!

It's funny, I hadn't had these in years, but had a craving the other night and whipped up a batch. Everyone was thrilled. These are comfort food for me for sure.

Oh Jane...these cookies bring back precious memories. My children loved them and every time my daughter would go over to the Duvall's, Julie and their daughters Sheri and Ann would have to take my Stake Cookbook and make those no bake cookies. Today I treasure the page in that cookbook that has the recipe, for you see it is soiled with the "fixings" those two girls used time and time again. Yummy cookies...don't remember the peanut butter or coconut though. Have to try it. Thank you for sharing
