Homemaking Tip – A Whole Lot of Cooking Going On

Last Friday, we had some serious cooking going on in our kitchen.  Ande and Cali came over two days early to help prepare for Ty and Michelle’s open-house dinner.  Ande was in charge of making the salad dressing and candying the almonds for the salad.  Cali was in charge of baking and frosting the cupcakes.  Calvin was in charge of barbecuing the brisket.  They're all good cooks.

Half way through the cooking process Cali said, “Hey! we’ve got this switched.  Ande is the one that is good at baking.  I’m a salad maker.”  So mid stream the girls switched jobs.  Ande took charge of frosting and decorating the cupcakes while Cali made the individual salads.

I’ll post the salad dressing, candied almonds, and cupcake recipes next Wednesday.  They are very good.  The brisket recipe is a bit harder because Calvin doesn't use a recipe and he smokes it for 18 hours.  It would just be easier if you came and ate it with us sometime.

My job was to make 40 mini loaves of bread and a half dozen regular sized loaves by 7:30 a.m. for another project.  I really like Jill’s Hannah’s Somebody’s bread recipe.  It’s moist, easy, fast and doable by 7:30 am.  The whole wheat bread recipe calls for applesauce.  Since mashed beans work as a nice substitute in desserts and I had a cup of leftover refried beans in the fridge, I added them to the bread dough in the place of applesauce.  It worked great!  The quality, taste, and texture seem the same as before.  Whole wheat and beans . . . now that is one hearty slice of bread.

Jill’s? Hannah’s? Somebody’s Bread

10 ½ cups flour
½ cup sugar
1 Tbsp. salt
3 rounded Tbsp. Saf-instant yeast
1/3 cup vegetable oil
4 cups hot water

Mix dry ingredients.  Add oil and water.  Mix for five minutes.  Spray counter with non-stick cooking spray.  Shape loaves, place in greased pans, and cover with a dish towel.  Let rise 25 minutes.  Bake at 350 degrees for 25 minutes.  Makes 4 loaves.

For whole wheat bread use the same recipe only use wheat flour, replace one cup of the hot water with applesauce (or mashed beans), and add an additional Tbsp. of oil.  Mix for ten minutes.

Which detail would you have campaigned for?  Cupcakes, salad, brisket, or bread?

Those cupcakes looks so cute. I'm a sucker for a little flower.

Really mashed beans instead of applesauce... would you swap that in any recipe? Banana bread? Carrot cake? I've switched other fruit purees but I guess I thought it needed to be sweet. I'm interested what else you use the beans for...

I'm glad you will be posting the recipes. Now I just need to remember to stop back by.

I would have been happy with any of the assignments... how unusual.

I realize I'm commenting a little late on the wedding and all, but gee it was fun to see the photos and recap. I'm very happy for you all.

I would have tried to get the quality control job.

And i really did enjoy the dinner!

Can I come up and have you teach me to make bread?

I want to come over and have some of Calvin's brisket!

I would have enjoyed any of those jobs with all of you in the kitchen.

I got that bread recipe from Hannah, and I call it Miracle Bread because it seems like a miracle that it's really finished in an hour! (I never would have thought to use beans, who knew?)

Mashed beans?!

I would have signed up for cupcakes and/or bread...salad and I don't get along.

Cali is too adorable for words in that picture.
